These days, induction cooktops are gaining importance as we look for alternative sources of heat and energy in our kitchens. The induction cooktops with their sleek design and high energy efficiency leave an impression of modernization in the kitchen. This home appliance does not emit carbon dioxide or nitrogen oxides directly, making it more eco-friendly than other cooking methods. Today, we will explore the basic principles of physics behind the working of the induction cooktop, and you will be amazed that these principles are almost two hundred years old and are also taught in school science at the secondary level.

What Makes Induction Cooking So Different? 

Traditional cooking methods rely on heat transfer: 

Gas stove → flame heats utensil

Electric heater → coil heats utensil 

But induction cooking flips this idea completely.  Instead of transferring heat, it creates heat directly inside the cookware.  That means:  Faster cooking, less energy loss, and greater safety.

 Think of it like this:  Instead of warming your hands near a fire, imagine the heat being generated directly inside your hands.  That’s essentially what induction cooking does—only with cookware.

The Science Behind the “Invisible Flame”

At the heart of induction cooking lies a powerful principle of physics called: Electromagnetic Induction, which was discovered by Michael Faraday in the 19th century. This principle states: A changing magnetic field can generate an electric current in a conductor.

This is the same principle used in: (1) Electric generators, (2)Transformers, (3) Wireless charging, and yes—your induction cooktop.

The Core Formula (The Physics Engine)

Here’s the fundamental law governing induction:

This equation simply means:

  • When magnetic flux changes, an electromotive force (EMF) is generated which produces an electric current.

This tiny equation is what powers your entire cooking experience

Step-by-Step: How an Induction Cooktop Works

Let’s break this down into a simple story.

Step 1: Electric Current Flows.

Inside your induction cooktop is a copper coil. When you turn it on:

  • An Alternating Current (AC) flows through the coil
  • In India, this happens at 50 times per second (50 Hz)

This creates a rapidly changing magnetic field above the cooktop surface.

Step 2: Magnetic Field Interacts with Cookware

Now, when you place ferromagnetic cookware (like iron or certain stainless steel):

  • The changing magnetic field passes through the cookware
  • It induces electric currents inside the metal

These currents are called: Eddy Currents

Step 3: Heat is Born Inside the Cookware

As these currents flow inside the cookware:

  • The metal of the cookware resists the flow of current
  • This resistance produces heat

This is called Joule Heating (I²R loss)

Additionally:

  • Magnetic hysteresis in ferromagnetic materials also contributes

Result:

  • The pan heats up from within
  • The cooktop surface stays comparatively cool

Why Only Certain Utensils Work?

Not all cookware works on induction. For induction cooking to work, you need: Ferromagnetic materials

Examples:

  • Cast iron ✔️
  • Magnetic stainless steel ✔️
  • Aluminium ❌ (unless layered with a magnetic base)
  • Copper ❌

Is Induction Cooking Safe?

We have discussed a lot about the magnetic field and the induced electromotive force (emf). In all of these, the question of safety comes naturally. Like any other electrical appliance used in our homes, induction cooktops also come with safety rules. However, induction cooking is considered very safe when used as instructed in the manual that comes with the induction cooktops. So, one should read the manual properly before using an induction cooktop. The induced emf does not pose a significant risk as the magnetic field is confined within the material of the cookware. These days, induction cooktops come with various safety features; however, people with pacemakers should consult a doctor before using induction cooktops.

Safety Features:

  • No open flame
  • Auto shut-off
  • Pan detection
  • Overheat protection
  • Cool-touch surface

Environmental Impact: A Greener Choice?

Induction cooktops are often considered more eco-friendly because:

  • No direct emission of CO₂ or NOx
  • Higher efficiency → less energy waste
  • Compatible with renewable electricity sources

However, environmental impact depends on how electricity is generated. If,

  • Renewable energy → very clean
  • Coal-based electricity → less eco-friendly

Future of the Induction Cooktops:

Induction cooking is rapidly gaining popularity worldwide due to its Energy efficiency, Safety features, eco-friendliness, and Smart technology integration. As an alternative of energy and heat in our kitchen, this can replace the traditional method of cooking. With increasing focus on sustainable living, induction cooktops are becoming a preferred choice for modern kitchens. The only drawback it holds in comparison to the gas stove is its dependence on electricity and the cookware made of ferromagnetic materials. So, unless all houses become electrified for 24 x 7, the utility of induction cooktops remains restricted and will be considered secondary after gas for its uses.

Induction technology is evolving rapidly.

Limitations You Should Know

Despite its advantages, induction cooking has some drawbacks:

  1. Dependence on Electricity: Power cuts = no cooking
  2. Cookware Compatibility: Requires special utensils
  3. Initial Cost: Higher upfront cost than gas stoves
  4. Rural Limitations: Less practical in areas with unstable power supply
